If you are willing to loose the ability to flip over it is pretty easy. Instead of mounting the top plate to the chassis you can use the four mounting holes to attach something which the sensors will mount on to.
If the sensors also need additional circuit boards these can be mounted to the new piece as well. The ThunderBorg has a 6-pin connector which will allow you to connect anything which only needs the first six pins of the GPIO. This should be enough for any boards which connect via I2C (such as UltraBorg).
